6 cloves of minced garlic
½ cup of heavy cream
A tablespoon of butter
½ cup of Parmesan cheese (make sure to grate it)
Sea salt – just enough to taste
Blackpepper – just enough to taste
Nutmeg – this is optional. If you want it, it should be just enough to taste
Melt the butter in a saucepan (use the medium size) with medium heat. Add the garlic and saute it for around 30 seconds. It should start to smell good.
Then add the heavy cream. Let it simmer gently, and continue to do it for around another 5 minutes. It should be a bit thicker now and the volume is reduced a bit – around 1/3. But be advised that the size of the saucepan will determine the amount of time for the reduction to happen
Lower the heat – it should be low by now. Add the Parmesan cheese and gradually and slowly whisk it. Keep doing it (with the low heat) until the texture becomes smooth. If you use blackpepper, salt, or nutmeg, add them now and keep stirring. In the event that the sauce is thicker than you want to have, add more cream slowly to thin it out.
Your sauce is ready by now!
