Split Pea Soup with Ham Served Better with Potato Chips

Ingredients

For Split Pea Soup

  • One pound of dried split peas
  • One ham hock
  • One pound of Smithfield ham. Make sure to chop it
  • A teaspoon of salt
  • A cup of yellow onions. Make sure to finely chop them
  • 3 tablespoons of unsalted butter
  • 2 teaspoons of garlic. Mince it well
  • 2 teaspoons of thyme. Choose the fresh one
  • ½ cup of celery. Finely chop it
  • ½ cup of carrots. Finely chop it
  • ¾ teaspoon of ground black pepper. Choose the fresh one
  • ¼ teaspoon of red pepper flakes. Make sure to crush it first
  • One bay leaf
  • 8 cups of water

For Parmesan Truffled Potato Chips

  • 2 pounds of red bliss potatoes. Leave the skin on. Scrub them well and make sure to pat them dry
  • A teaspoon of ground black pepper. Choose the fresh one
  • 2 cups of veggie oil
  • A teaspoon of salt
  • A tablespoon of truffle oil
  • ¼ cup of grated Parmesan

Instructions

For Split Pea Soup

  1. By using a big bowl or pot, place the peas and cover them with 2 inches of water. You’d better soak them for at least 8 hours. It’s better if you can do it overnight.
  2. Once you are done, drain the peas. Set them aside.
  3. You need to score the ham hock. Place it within a cover and cover it with water. Let it boil before reducing the heat and then let it simmer for around one hour. Drain it. Set it aside.
  4. By using a big pot, melt the butter with medium high heat. Add onions and cook it by stirring it for 2 minutes. Then add carrots and celery. Again, cook and stir it until everything is soft. It takes around 3 minutes. Then add garlic. Stir and cook it for around 30 seconds.
  5. Add the ham and also the ham hock. Cook and stir them until they beginning to brown.
  6. Add the salt, pepper, drained peas, and pepper flakes. Cook and stir everything for around 2 minutes.
  7. Then, add bay leaf, 8 cups of water, and thyme. Cook and stir it occasionally. Wait until the peas turn tender, which takes around an hour.
  8. If the soup becomes dry or too thick, you can add water. But do it slowly and slowly so you won’t add too much water to make it too runny
  9. Remove and discard the bay leaf. Add the seasoning to taste – make adjustments when necessary.

  1. Slice the potatoes by using sharp knife. Make sure that it is round and thin. Place them in a big bowl of water so discoloration won’t happen
  2. By using a big and heavy pot, heat the oil.
  3. Make sure that the potatoes are dry. Cook them until they turn golden brown evenly – takes around 2 minutes. Do it in batches. Don’t forget to add the oil in batches too.
  4. Transfer them on a lined plate with paper towels. Drain them and put them in a big bowl.
  5. Add truffle oil, pepper, salt, and cheese. Toss and mix them thoroughly.
